Chilled cucumber-yogurt soup...

A summer recipe. Because it's cold. And really light...

  • 4 cups peeled, seeded chopped cucumber
  • 2 cups water
  • 2 cups (plain, unflavored) yogurt
  • 1 clove garlic
  • several fresh mint leaves
  • 1 tablespoon honey
  • 1 1/2 - 2 teaspoons salt
  • 1/4 teaspoon dill weed

    Puree everything together in the blender.
    Chill until very cold (do not freeze).
    Garnish with
  • chopped scallions or chives

    Serves 4-6. It will last in the fridge for up to a week.
